Mozzarella Meatball Sandwich

I LOVE meatball sandwiches, and this recipe just takes it to the next level for sure.  I wanted to change up the traditional meatball sandwich or “grinder” to include some mozzarella cheese INSIDE of the meatball!  Who doesn’t like more cheese??  I used my meatball recipe from http://recipesinspiredbymom.com/spaghetti-sauce-meatballs-sausage/.  Then I used some little fresh mozzarella balls called “Ciliegine” from Bel Gioioso.  Any cherry-sized mozzarella ball would be fine.

Form a large sized meatball using an ice cream scoop.  Then press a hole in the middle using your finger, and stuff a mozzarella ball inside.  Cover it over with the meat mixture, pressing it closed completely.  Place meatballs on a parchment covered cookie sheet, and bake for 20 min at 350 degrees.  Turn them over, and return to the oven for another 10 min.

Butter some hearty Italian rolls, and sprinkle with garlic powder, and your favorite shredded cheese blend.  Broil for just a few min, until bubbly and lightly browned.

Place the meatballs on the rolls, and top with your favorite marinara.

OK, top with a little more cheese!  You can customize the sandwich by adding sweet roasted peppers or grilled onions as well!  Return to the broiler for another few min. – just til toasty and cheese is melted.
