My favorite combination – both a cheesecake AND a cake. It’s soft and fluffy from the cake, yet rich, moist, and cream-cheesy from the cheesecake. Super easy to put together.
You could bake your own, but my time saver for this cake included a pre-made 7″ key lime cheesecake (from a bakery). You can get fresh or frozen cheesecakes in your grocery store bakery section. I topped this with a jar of key lime curd, and finally an 8″ vanilla cake layer, which I baked, and cut down to fit the size of the cheesecake. I frosted the entire cake with buttercream frosting to a smooth finish. Then garnished with fresh mascarpone whipped cream, and sprinkles. The flavor combination here is absolutely delicious!
