Oreo Sprinkle Chocolate Chip Cookies

These adorable cookies are nothing more than a homemade “sprinkle” chocolate chip cookie, stuffed with a THIN Oreo cookie. I chose the new THIN Oreo cookies, as I didn’t want a super tall cookie stuffed with a regular sized Oreo. I thought that would make for a rather “giant” cookie, that would taste more OREO than CHOCOLATE CHIP COOKIE. I just wanted a thin sliver or Oreo, inside of my already large cookie. These came out perfectly!

Get a package of the new OREO thin cookies.

Start with your favorite homemade chocolate chip cookie recipe. Add about 1/4 c to 1/2 c sprinkles with the chocolate chips, and blend. Chill dough for about 30 min. My recipe made 20 large cookies (I used 2 medium sized ice cream scoops of dough for each cookie).

Preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper.

On a piece of parchment paper, flatten out each of the 2 scoops of dough using the heel of your hand. Flatten dough balls til slightly larger than the Oreo cookie.

Place 1 thin Oreo in the center of 1 flattened dough ball. Place the other flattened dough ball on top of the Oreo. GENTLY press the edges together using your fingers. I found that if you PRESS the cookie together, the Oreo will break. You can form the cookie in your hands, which worked really well for me. You want to completely enclose the Oreo inside of the dough.

Top with a few more sprinkles, and gently press into the dough.

Place 6 cookies per pan – with about 2″ between each cookie. Bake for about 15 min. I always like to switch oven shelves after 8 min. for more even baking. Watch closely til just light brown around the edges.
