Key Lime Martini

I’m kind of on a roll with key lime lately.  I really LOVE the flavor of key lime.  I’ve made a key lime cupcake, a key lime cake, key lime cheesecake pops, and now a I’m sharing my key lime martini!  My girlfriends and I have been known to make this by the pitcher for a party!  This recipe is tart, and creamy all in one sip!  It’s really delicious.  The graham cracker rim is essential, as it makes this taste just like a key lime cheesecake!  I have to be honest, and say I’m sipping on one right now, as I’m writing this blog!  Can’t let my photography sample go to waste!

The recipe.  Makes 1 martini.

Key lime martini:

2 oz vanilla vodka
1 oz Pineapple juice
1/2 oz Key lime juice (or lime juice is fine)
2 Tbsp cream of coconut (Coco lopez)
Graham cracker crumbs
Lime wedges for garnish

Prepare martini glass with graham cracker crumbs.  I used a frozen glass, dredged in a plate of graham cracker crumbs.  You can also dip the rim of the glass in water, then into the crumbs.  Fill a shaker 1/2 full with ice.  Add vanilla vodka, pineapple juice, lime juice and cream of coconut.  Shake til very cold.  Pour into prepared glass.

Garnish with lime wedge.  Sip, making your way around the glass to enjoy every sip with the graham cracker crumb edge!
