This is my version of a Disney-inspired “Frozen” Cupcake. Anyone that has little girls in their lives will appreciate this one. My granddaughter Natalie is no exception. Our entire family recently spent a week at Disneyworld, and it was all about the princesses!
So I thought my own “Frozen” cupcake would be a big hit for my little princess!
I made these cupcakes using a vanilla cake. Now, throughout my baking business, I made all of my cakes from scratch. Except for vanilla! I tried sooooo many scratch vanilla cake recipes – many even labeled “best vanilla cake” recipe. I have yet to find one that tops my favorite mix from King Arthur Flour. It is their Golden Vanilla Cake mix – available online at kingarthurflour.com. It is soft, moist, light, and very “vanilla”! And it truly tastes “homemade”. Those are the things I look for in a vanilla cake, so my search is over! You will add your own butter, oil, eggs, and milk. I encourage you to try it and see for yourself!
Mix the batter according to package directions, and bake cupcakes at 350 for 18 min.
I like them to just begin a very light golden color – do NOT let them “brown”.
My favorite frosting recipe is actually a “butter cream cheese frosting”. I have made this recipe hundreds of times during my baking business. For this recipe, it frosted 19 regular sized cupcakes.
Here is the recipe:
BUTTER CREAM CHEESE FROSTING
1 8 oz pkg. cream cheese *at room temp
1 stick unsalted butter *at room temp
1 tsp vanilla
Beat together in a stand mixer using the paddle attachment, til smooth.
Add 4 cups of powdered sugar, 1 cup at a time.
Mix for about 2-3 min til very smooth.
Add gel food coloring if desired, then mix again til incorporated.
Transfer frosting to a large pastry bag. I like the disposable plastic ones – available at craft stores.
For this design, I used my favorite Wilton piping tip: 1mm star tip.
Frosting takes practice, but don’t be afraid! There are lots of tutorials and books on the subject. You’ll be amazed at how easy and fun it is!!
I rolled these little cuties in some snowflake sprinkles. I find sprinkles everywhere – Homegoods, grocery stores, Michaels craft stores, and online.
Then I topped them with a light dusting of edible glitter (available online).
Absolutely delicious and magical!
