Easter Bunny Butt Cupcakes

These Easter bunny butt cupcakes are so adorable! They feature a bunny digging in the “dirt”, aka: chocolate cookie crumbs, atop a chocolate cupcake. Super idea for any little one in your life. I made these for my 3 grand babies – can’t wait to see their faces when they see these tonight!

Now I won’t lie – these are a project for sure. They took me nearly all day Saturday, from the baking of the cupcakes, to creating the adorable little “feet”, making the bunny bodies, etc. But if you’re up for a challenge, and a super cute outcome – give these a try!

You will need:

12 chocolate cupcakes
EITHER: 12 donut holes, or 6 vanilla cupcakes (for bunny bodies)
12 mini marshmallows
2 cans frosting (1 vanilla, 1 chocolate)
White and light pink candy melts
Sweetened flaked coconut (lightly chopped to make the flakes smaller)
chocolate wafer cookies – finely crushed

For starters, bake 12 chocolate cupcakes (mixes or home recipes are fine here), and cool completely. The bunny bodies can be made using donut holes as an easy option. I tried using the vanilla cupcake CAKE alone for the bodies, but found this really hard to work with, as it tended to fall apart in the frosting. For this batch, I made the bodies with a few VANILLA cupcakes, crumbled into a bowl. I added a little vanilla frosting, and blended the mixture together (just like you would for a cake pop). This worked really well for me. I scooped it out into round bunny bodies using a med ice cream scoop.

Now make the little bunny feet! This was my favorite part. You will need white and light pink candy melts. Make the white feet using a template made of parchment paper. Draw the shape you want, about 1″ x 1/2″, at least 24 times. I made about 30 myself, allowing for a few mistakes! Pipe the melted white chocolate melts in a small piping bag, with the tip cut off. Pipe into the little feet shapes. Make them as smooth as possible on top. Allow to dry, then melt the light pink melts in a small bowl. I used a toothpick to add the toes, and pad for each little foot.

Frost the chocolate cupcakes with the chocolate frosting, using a knife to smooth. Dip the frosting top into the chocolate wafer crumbs, til coated.

Now make the bunny bodies. If using donut holes, slightly melt the vanilla frosting in the microwave (10-20 seconds). Stir. Lightly coat the donut hole with frosting, then roll in the coconut. Set aside on parchment to dry. To make the cake pop bodies, crumble the vanilla cupcakes into a bowl. Add a few spoonfuls of the vanilla frosting, and stir to combine. Using a med ice cream scoop, shape the bunny bodies using your hands. Then coat with the softened frosting, and roll in the coconut. Set aside to dry.


For the tails, dip mini marshmallows on a toothpick, into the softened frosting. Remove excess frosting, then roll the marshmallow in the coconut flakes. Remove from the toothpick, and place on parchment to dry.

Now you’re ready to start the assembly process!

Melt some more of the white candy melts. This will be your “glue” to create the little bunny. I used a knife to apply a light coat of “glue” to the tail, then placed it on top of the body securely. Let dry for a few min. Place the body on top of the cupcake securely. They sort of look like little snowmen at this point! Lastly, add the feet, toes facing down – again using the “glue” to apply. NOW it looks like a bunny digging in the dirt!!
