Chocolate Chip Brownie Cookies

Can’t decide if you want to make cookies or brownies? How about make both? These chocolate chip and brownie combo cookies are the perfect solution! 2 doughs are combined into 1 cookie.

They are fudgey like a brownie, crisp on the outside like a chocolate chip cookie, and tender on the inside, with plenty of chocolate chips.

This recipe will make 18 large cookies.

For the chocolate chip cookie dough:

1 1/4 c all purpose flour
1/2 tsp baking soda
1/4 tsp salt
7 Tbsp unsalted butter, at room temp
1/2 c light brown sugar (packed)
1/4 c granulated sugar
1 tsp vanilla
1 large egg
3/4 c semi sweet chocolate chips

Blend flour, baking soda, and salt in a small bowl, and set aside.

In a stand mixer, with a paddle attachment, combine butter, brown sugar, granulated sugar, and vanilla. Beat til blended. Add egg, and blend. Add flour mixture just til blended. Add chocolate chips, and blend. Refrigerate dough for 30 min while you make the brownie dough.

Next, make the brownie dough:

6 Tbsp unsalted butter
1/2 c semi sweet chocolate chips
1 c all purpose flour
2 Tbsp unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c light brown sugar, packed
1/4 c granulated sugar
1 large egg plus 1 egg yolk
3/4 c semi sweet chocolate chips

Melt butter and 1/2 c chocolate chips in a small sauce pan over low heat, OR microwave on high in a microwave safe bowl in 15 second intervals, til melted and smooth. (about 60 seconds total). Set aside and cool.

In a medium bowl, add flour, cocoa powder, baking soda, and salt. Blend, and set aside.

Pour the chocolate mixture into a stand mixing bowl with a paddle attachment. Add sugars, and vanilla, and blend to combine. Add the egg and egg yolk, and blend. Add the flour mixture, and blend just til combined. Add remaining chocolate chips, and blend. Cover and refrigerate for 15 min.

Preheat oven to 350 degrees. Prepare 2 cookie sheets with parchment paper.

Using a med ice cream scoop – Take a level scoop of the brownie dough in your hand, and shape into a crescent. Place it on the cookie sheet. Take a level scoop of the cookie dough, and shape into a crescent. Place it next to the brownie like a Yin and Yang symbol. Press together, then flatten slightly with your hand. Shape into a circle. This will incorporate both flavors into a swirl pattern. Top with additional chocolate chips, and press into the dough slightly.



The cookies will spread, so place them about 2″ apart.

Bake for 10 – 12 min, til golden on the edges only. Remove from the oven to cool completely on a cooling rack.

Get a tall glass of milk, and treat yourself to a cookie!
