Biscuits and Gravy Breakfast Casserole

My favorite breakfast growing up was biscuits and gravy. My Mom would put the biscuits in the oven, and make the gravy on the stove top. It took about 10 minutes! The topping that made this simple dish perfect was a drizzle of maple syrup – it’s that sweet/savory combination that is so delicious.

I turned this idea into a casserole, and added eggs and cheese for a full “buffet” of a breakfast!

BISCUITS AND GRAVY BREAKFAST CASSEROLE recipe.

Serves 6 – 8

Preheat oven to 350 degrees.

Prepare a casserole dish (11″ x 8″, or 13″ x 9″) by coating with butter, or cooking spray.

Ingredients:

* 1 pkg refrigerated biscuits (8 count) (I used only 3-4 “grand” biscuits, since the whole pkg will puff up too much. Bake the rest of the biscuits in the oven for use later).
* 12 oz breakfast sausage
* 2 T butter
* 2 T all purpose flour
* 2 1/2 c milk (divided)
* 1/4 tsp garlic powder
* 1/2 tsp salt
* 1/2 tsp ground pepper
* 6 large/extra large eggs
* 8 oz shredded cheese (cheddar, colby, monterey jack, or your favorite combo).

Cut each of the 3-4 biscuits into 8 pieces. Spread evenly into bottom of the casserole dish.

Cook the sausage in a large skillet, crumbling into small pieces using a wooden spoon. When fully cooked, leave about 1/4 c of sausage in the pan, and remove the rest to a paper towel-lined plate.

Add the 2 T of butter, and 2 T of flour to the pan. Cook and stir til combined. Simmer for 2-3 min on low.

Slowly stir in 2 c milk, using a whisk to combine. Add garlic powder, salt and pepper. Simmer til thickened.

Whisk eggs together with remaining 1/2 c milk. Set aside.

Sprinkle crumbled sausage over biscuits. Sprinkle 1/2 of the shredded cheese over the sausage.

Next, pour the egg mixture over the top evenly, then top with the gravy mixture. Top with the remaining cheese. Bake 35 – 45 min – depending on the size of your casserole.

Bake til “set”, but slightly jiggly in the center. I turned the broiler on low for another 2-3 minutes until browned on top. Allow to cool before serving. Serve with maple syrup drizzled over each serving!
