Barbeque Pulled Pork Nachos

Sometimes the best idea for something quick and easy evolves from leftovers!  I had some leftover pulled pork from a party last weekend – it freezes well, so had put it in the freezer for the last several days.  Tonight, I was thinking about what to use it for – pulled pork is so versatile – it can be made into a pizza, tacos, or of course pulled pork sandwiches!  But tonight, I think it would be amazing turned into barbeque pulled pork nachos!  The weather here in the Chicago area FINALLY rose to a balmy 70 degrees today!  So we wanted to sit outside with a quick, savory snack, and some cocktails!  This idea will satisfy that craving for sure!

This dish took me about 20 min. from start to finish!  I thawed, then reheated the pulled pork under the broiler for a few minutes.  Love those crispy edges!  While that was in the oven, I spread a layer of corn tortilla chips on a parchment lined cookie sheet.  I topped the chips with some shredded colby jack cheese.

I removed the pork from the oven, and gave it a rough chop.  Then I placed the chopped meat over the cheese and chips.  I put the sheet pan in a 350 degree oven for about 10 – 15 min, until the cheese was melted, then removed it from the oven.

I couldn’t help myself, had to have this piece!

I topped the meat with BBQ sauce and sour cream, and garnished with chopped cilantro.  You can add green onions, tomatoes, or jalapeno peppers if you like.

Then I placed the pile of nachos onto a serving plate using a spatula.  Pile it as high as you want!

I served with guacamole – Delicious! Don’t forget an ice cold beer or margarita!!
