Avocado and Blue Cheese Guacamole

Guacamole can be made so many different ways – I like to try different versions whenever I get the chance.  The varieties are endless – spicey, creamy, chunky, etc.  My favorite by far is this recipe that includes blue cheese.  Guacamole is one of those dishes that can be easily tailored to exactly what you like.  I don’t even have this recipe written down – it resides in my head!  I tailor it to the number of people I’m serving, and the ingredients I have on hand.  I tend to just “chop” and throw everything together in a bowl.

Basically, I use avocados, tomatoes, red onions, garlic, Tabasco green pepper sauce, limes, blue cheese, cilantro, and salt and pepper.  How simple is that??  You can add more spice, you can make it chunky, or smooth, add or delete any ingredients you like.  That’s what makes it so versatile!  This combination is absolutely delicious!

Recipe (serves 4)

4 ripe avocados (diced)
2 roma tomatoes (chopped)
1/3 c diced red onion
2 cloves garlic (minced)
1/2 to 1 bottle (2 oz) Tabasco green pepper sauce
juice of 2 small limes, or 1 large
1/3 c blue cheese crumbles
salt and pepper to taste
chopped cilantro for garnish

Chop avocados into a med bowl.  Leave chunky, or mash with a pastry blender to desired texture.

Add:  tomatoes, onion, garlic, salt/pepper, tabasco sauce, lime juice, and blue cheese. Stir together.

Garnish with cilantro, and lime wedges, sprinkle with additional blue cheese.  Serve with fresh tortilla chips, and an ice cold Margarita!
