Sprinkle Chocolate Chip Cookies

Adding 1/2 c of Jimmie sprinkles to chocolate chip cookie dough turns them into pure party cookies! Pretty specs of color throughout, and sprinkles on top. The cookie is chewy on the inside, with crisp edges. I made a vanilla version, and a chocolate version. YUMM to both~!

Recipe for Sprinkle Chocolate Chip Cookies (Makes 16 large cookies)

Ingredients:

* 1 c unsalted butter, at room temp
* 1/2 c granulated sugar
* 1 c light brown sugar
* 2 large or extra large eggs
* 1 Tbsp vanilla extract
* 2 1/2 c all purpose flour (for chocolate cookies, change to 2 c flour, and
1/2 c cocoa powder)
* 1/2 tsp baking soda
* 1 tsp baking powder
* 1/2 tsp salt
* 1/2 c Jimmie sprinkles, in assorted colors
* 1/2 c semisweet chocolate chips
* 1/2 c white chocolate chips

Preheat oven to 350 degrees.

Prepare 2 baking sheets lined with parchment paper. Set aside.

Combine flour, (cocoa powder if using), baking soda, baking powder, and salt in a med bowl, and whisk together. Set aside.

Combine in a stand mixer: sugar and butter. Blend using a paddle attachment til light and fluffy. Add vanilla extract. and blend.

Add eggs and mix til incorporated.

Add the dry mixture slowly, blending after each addition.

Add sprinkles, and chocolate and white chocolate chips. Mix just til blended.

No need to chill the dough. Scoop onto baking sheets, using a large ice cream scoop. Space about 2″ apart to allow for spreading. Top with a few more colorful sprinkles.

Bake for 8 min, then switch oven shelves, and bake for another 4-5 minutes. Don’t over-bake. The centers should still be a bit doughy looking, but the edges are beginning to brown lightly.

Cool completely on wire racks.
