I grew up in Connecticut, and I go back there once a year to visit with my family. My bother and one sister still live there – another sister from Alabama will usually join us for this “reunion”. We like to spend time together visiting, laughing, shopping, cooking and eating, and enjoying refreshing beverages together! One of my favorites was discovered on one of these trips home several years ago. It is this Peach Mango Cosmo.
We were at “Charley’s”, one of our favorite restaurants, while shopping at the Crystal Mall. That’s where this cocktail originated. They were also known for their “pizza salad” – an amazing dish that I ordered every single time I went there! (I’ll have to cover that one in a future post!) Combine that – with this cocktail, and I was in heaven! Sadly, Charley’s has since closed. Thankfully, that was not the end of this cosmo! I was able to get the exact recipe during one of my trips home, so have been able to duplicate this drink over and over again. Would love to share it here!
You MUST find Parrot Bay Mango Rum – in order to get the exact flavor that makes this cocktail so good! I say this, as I have tried to use other brands of mango rum, and trust me – it’s just not the same! I had to order this online, but it is available in some liquor stores.
Ingredients:
1 oz. Parrot Bay Mango Rum
1 oz. Vanilla Vodka
1 oz. Cranberry Juice
1/4 oz. Monin Peach syrup (you can substitute Peach Schnapps for this ingred. – without changing the flavor)
Add to ice-filled shaker, and shake til very cold. Pour into your favorite martini glass. Garnish with a peach slice.
