A cobbler is the perfect answer to leftover fruit in the frig. Today, I had about 7 peaches, and some blueberries and raspberries to work with. Perfect for this Peach and Berry Cobbler! A super-delicious comfort food for sure! It took about 20 minutes to prepare, and an hour to bake. Warm cobbler ready in no time!
For the fruit – use blueberries, strawberries, raspberries, or blackberries, (or even cherries or rhubarb). You can use either fresh peaches, or nectarines. (frozen fruit is OK as well, but fresh is always best to me).
Fruit filling:
6-8 peaches, peeled and sliced
2 tsp lemon zest
2 Tbsp fresh lemon juice
1/2 c granulated sugar
1/4 c flour
1 c blueberries
1/2 c raspberries
Combine together, and set aside.
Cobbler topping:
1 c all-purpose flour
1/2 c granulated sugar
1/4 c light brown sugar, packed
1/2 tsp salt
1/4 tsp cinnamon
1 stick cold unsalted butter
Optional: 1/2 c sliced almonds
Combine all dry ingredients – then add the cold butter by shredding it into the mixture using a large grater. Toss mixture gently. Add sliced almonds if desired.
Preheat oven to 350 degrees.
Prepare a casserole dish with cooking spray.
Pour fruit mixture into the dish. Top with crumble mixture, and spread to the edges. Top with a few more almond slices if desired.
Place dish on a parchment lined sheet pan, and bake for about 1 hour, til browned and bubbly.
Enjoy with a scoop of vanilla icecream!
