Minnie and Mickey Cupcakes

I made these Mickey and Minnie cupcakes a few years ago – for a combined birthday party for my grand daughter Natalie, and grand son Hunter.  They were simply chocolate and vanilla, and took just a little time to decorate!

Use your favorite chocolate and vanilla cake recipe to make the cupcakes.  I used my butter cream cheese frosting
(see prior blog post).  Color 1/2 of the frosting a light pink.  Divide the remaining frosting in 1/2 again.  Color half of this red.  For the chocolate, I simply added about 2 Tbsp of cocoa powder, and mix in til combined and smooth.

I used some melting chocolate, which you can get in many colors, at Michael’s craft store – to make the Minnie bows pink and white.  They also sell the “bow” plastic molds as well.  I made these ahead of time, then placed the mold in the freeze to harden.  This takes just a few minutes.

Finally, I made the “ears” for both cupcakes.  I bought some “mini” Oreos, and took them apart.  Scrape all the frosting off of the cookies and discard.  I found I needed to coat the cookies in order to keep them from getting soggy in the frosting.  So I dipped the cookies in some melted chocolate coating, and set them to dry on parchment paper.  This worked like magic!  No more soggy ears!

Pipe the pink frosting onto the Minnie cupcakes.  Top with ears, and a bow, and a few white bead sprinkles.

For the Mickey cupcakes, I swirled the red and chocolate frostings by putting both colors, side by side, into a piping bag.  Use piping tip 1M open star.  They will swirl together as you begin piping!!  Then add the ears.  For the “buttons” on Mickey’s shorts, I added 2 dabs of white melted chocolate onto the front of the cupcake liner.
