In addition to “all things princess”, my grand babies also love unicorns, and mermaids! I’ve made a princess cake, and a unicorn cake – now it’s time for MERMAID CUPCAKES! These are adorable! I started with a plastic mold for the “mermaid tails” – which I found at my local Hobby Lobby. I formed the tails using white candy melts and paste food coloring. They took about 15 min. to make, then another 15 min. in the freezer to set. The “cuteness” started immediately!
Then I mixed up my favorite Golden Vanilla Cake mix from King Arthur Flour. You can use any vanilla cake mix or recipe you want for this. All you need to do is divide the batter into 3 bowls, and color with a very small amount of paste food colors (teal, purple, and pink).
Line a 12 cupcake muffin pan with paper liners. Add the 3 colors by icecream scoopfuls, until about 3/4 full. Swirl slightly with a toothpick to blend colors.
Bake according to package, or recipe directions. Cool completely.
Mix a recipe of my butter cream cheese frosting from my prior post. Color with a pale teal color.
Use a large pastry bag and an open star tip 1M. Fill bag with frosting, and swirl a circle around the cupcake. Dip the edges into a blend of “mermaid” colored sprinkles.
I cut a slit in the top of each cupcake using a small sharp knife. This will help position the mermaid tail slightly INTO the cupcake. Place each tail into the cupcake. Pipe on another circle of frosting around the tail.
Refrigerate to set – serve at room temp for best cake texture.
