Hot Artichoke Dip

Hot artichoke dip is a quick and easy, SUPER YUMMY chip dip to serve for a crowd.  Hey, I made it tonight just for me!  It’s not for the diet-conscious I’m afraid – this is the real thing.  I never have any leftovers when I bring this to a potluck!  It’s warm, cheesy, and the artichoke flavor, combined with the mild green chilies, is amazing!  And there are only 5 ingredients!  You can cut this recipe in half if you want a smaller amount, but trust me, this will be gone in no time!

Here is what you need:

2 c Mayonnaise
2 c shredded mozzarella cheese
2 c shredded Parmesan cheese
1 – 4 oz can mild green chilies
2 cans whole artichokes or artichoke hearts, drained

Drain and chop artichokes.  I like them pretty finely chopped, but you can leave them more roughly chopped if you prefer.  Transfer to a large bowl.

Add Mayonnaise, cheeses, and chilies.

Pour into a glass baking dish.  Bake at 350 degrees for 30 – 40 min uncovered.  It will be bubbly, and lightly browned when done.

Serve with tortilla chips.
