Citrus curds are amazing components for so many dessert items. They are bursting with intense flavor – so they go really nicely in layered desserts, as a cupcake filling, served with fresh fruit and whipped cream, served with cakes (such as a strawberry yogurt cake), as a cake filling, or spread on toast or muffins. I like to keep a batch of either lemon or lime curd in the frig. You can also make this into an “orange” curd! This recipe is super easy, and can be made in the microwave in under 10 min! I have tried to double this to make more at 1 time, but it doesn’t seem to come out with the right consistency. So I recommend you make 2 batches separately, if you want to double it. I will show you the recipe to make LEMON curd, but you can substitute limes and lime juice, or oranges and orange juice if you like. It’s the tart, citrus flavor that makes this such an amazing condiment! It will keep in the refrigerator for 7-10 days.
Ingredients:
1/2 c sugar
4 Tbsp unsalted butter, at room temp
1/2 tsp lemon zest
1/2 c lemon juice (fresh-squeezed is best!)
1 large egg
Add all ingredients to a med microwave safe bowl. Make sure it is tall enough for the mixture to DOUBLE in size as it cooks. Microwave on high, for 1 minute intervals, blend well with a whisk after each minute – for a total of 6 minutes. Pour mixture through a fine mesh strainer, and cool completely in the refrigerator.
