I love cake! I have made LOTS of cakes for all kinds of occasions. I get excited at the thought of designing one. From the theme, the cake itself, the filling, then the color scheme, type of frosting, and how I’m going to decorate the top and the sides – I love all of it! This is a little stroll down my “Memory Lane” of cake baking over the years!
This little blue and white coconut cake was the topper to a wedding cupcake tower. I covered the side in white chocolate lace butterflies. It looked amazing on top, and served as the cake that was cut by the bride and groom.
These are some of the “smaller” cakes I’ve made. Children’s birthdays are always cute, and colorful.
Cakes can also be elegant, and simple! These are an assortment of birthday cakes.
Individual chocolate almond cream cakes, glazed in chocolate ganache. There is something special about getting to have a cake all to yourself!
Then there were the “party cakes” – the half sheet cakes (12″ x 17″). These would serve about 25 people. I made many of these – for the restaurant, for customers of my business, and for friends. There have been times when my refrigerator was completely full of cakes!
The cakes that were served at DaBaffone Cucina Italiana were among my favorites. I would rotate every week, with a different cake. There were chocolate layer cakes, and my most popular – Chocolate Peanutbutter cake.

Andes Mint Chocolate Cake, and Oreo Cookies and Cream Cake.
I think I will be making cakes for a very long time – the possibilities are endless! I hope to inspire everyone to get in the kitchen, and bake! Most of what I know about
baking I learned myself. You just have to get in there and do it!
