To go along with Nonni’s pancakes, try this recipe for black pepper maple bacon! I prefer to prepare mine in the oven to save on the stove top mess. I use a cookie sheet, aluminum foil, and a cooling rack. I prefer thick cut bacon, and top with a light coating of maple syrup, and fresh ground black pepper. You can sprinkle with a little brown sugar as well, but need to be careful of this burning in the oven! You end up with a sweet, yet slightly spicey flavor that is out of this world!
Cover a cookie sheet pan with foil. (Make sure to use a pan with edges, so the bacon drippings stay contained!)
Then place a cooling rack on top of the foil – this will keep the bacon strips out of the drippings. Place the strips on top of the rack.
Lightly drizzle the bacon with maple syrup, and cover each strip using a pastry brush.
Sprinkle fresh ground pepper over the top of all bacon slices.
Bake in a 400 degree oven, for about 20 min. Begin checking after 15 min – as oven temps may vary. You can turn each slice over if you like, and continue baking, but it’s not necessary. Cook to your desired taste, being careful not to burn them! The slices can cool right on the rack, then move to a serving plate, or right on to you own plate! Enjoy with eggs, pancakes, waffles, cut up in a salad, or try these on a BLT!
