Just in time for Easter! I first made these little birds nest cupcakes while my Elegantly Sweet Shoppe business was in full swing. I had many occasions during those 4 years, to showcase a wide variety of my cupcakes – weddings, wedding and baby showers, birthdays, retirement parties, women’s business days in Crystal Lake – now, I make them for family and friends, and of course for my grand babies! I’m pretty sure they are going to love these.
You will need to purchase some bar chocolate – I recommend semisweet chocolate bars in the baking section of your grocery store. You will also need some chocolate candy eggs.
I used my chocolate cupcake recipe, which never fails me. Here is the recipe from my prior post:
Now for the frosting – I tinted this with a “moss green” paste food coloring, to match the Hershey’s chocolate candy eggs I chose for my cupcake design.
Chop some semisweet bar chocolate – or your favorite kind of chocolate – into thin strips that will resemble small sticks and grass (bird nesting materials). Set aside.
Use your favorite piping tip, and starting in the center, pipe a circle around the cupcake to form your “birds nest”.
Now assemble the nest – use a spoon to place some of the chopped chocolate onto the nest, making a small indent in the center with the frosting showing. DON’T use your fingers for this part, as the chocolate will melt on your hands! A spoon works perfectly. This will allow the “eggs” to stick securely to the cupcake. Press into the frosting if necessary, to secure the chocolate. Then add your candy eggs, pressing them in slightly as well.
I sprinkled mine with a little edible glitter, and they look amazing!
