Bacon Cheeseburger with Onion Jam

I’ve discovered my new obsession – ONION JAM.  You can make it, or buy it.  Either way, it takes any burger to the next level!  It’s a perfect combination of sweet and savory.  The recipe I made for this burger is called “Jalapeno Drip Jam”, from the new Magnolia Table cookbook by Joanna Gaines.  I was shopping at the Galena Canning Company store this past weekend, and found a jar of onion jam already prepared – imagine that!  You can add it to a burger that easy!

The homemade version from the Fixerupper star was absolutely delicious, I have to say.  It didn’t take long either.  All you need is butter, brown sugar, onion, canned diced jalapenos, mustard, and about 45 min.  Soooo worth it!  You can make it while the burger is cooking!

Recipe:

4 Tbsp unsalted butter
1 med white onion, sliced to 1/4″
1 c packed light brown sugar
1 – 4 oz can diced jalapenos, undrained (about 1/2 c)
2 Tbsp stone ground mustard

In a med saucepan, melt the butter over med heat.  Add onion and saute until tender (6 min).  Add brown sugar, jalapenos and the juice, and mustard.  Stir and cook til bubbly.  Reduce heat and simmer til thickened (about 30 min). Cool slightly before  using.  store in refrigerator for up to 1 week.  Makes 1 1/2 c of jam.

I made burgers on the grill, using my favorite ground beef chuck blend of 80/20.  Add a bun, and your favorite burger fixins,  then top with the onion jam!  See if you don’t find yourself sopping up the jam drippings as you’re eating the burger!
