I love salmon – pretty much any way it is prepared. I discovered this dish at Bonefish Grill a few years ago. It was served as a “special” on their menu during one of my visits there. I could not believe how absolutely delicious it was! Every bite was better than the last one! There is something about the flavor combination of salmon, blue cheese, spinach and bacon – that is unbelievably amazing! I guess you have to like blue cheese to agree with me – but please give it a try if you do!
I went back to Bonefish several times after my first encounter with this dish, only to disappointedly find that it is no longer on the menu. That meant only one thing – I had to recreate it myself! I have done just that, and tonight, my husband and I “oohhed and ahhedd” our way through dinner with the same amazement we had when we first discovered this dish!
Here is my version of the Bonefish Salmon Special!
Recipe:
4 salmon filets ( I used the salmon filets from Costco – with the herb butter on top). These are perfect!
1 – 5oz pkg fresh baby spinach
splash of white wine
salt and pepper
3 strips of raw bacon, chopped
1 shallot, chopped fine (1/4 c chopped onion will work as well)
olive oil
Blue cheese, chopped
Add 2-3 Tbsp olive oil to a skillet. Add chopped shallot, and heat over med-low heat til tender (5 min). Add spinach and splash of white wine. Stir to combine. Add salt and pepper. Stir just til spinach begins to wilt (5 min). Turn off heat, and set aside.
Bake salmon at 400 degrees, for 25 – 30 min.
Remove from oven, and top with sauteed spinach mixture, blue cheese, and bacon. Return to oven and broil on low for another 5 min, til cheese is melted, and bacon is crispy.
Serve with rice pilaf. Enjoy a Bonefish special in your own home!
