Pastel Swirl Cupcakes

In my eternal quest to come up with new and amazing cupcakes, I came up with this little gem!  Pastel swirl cupcakes.  My grand babies will love these for sure!  I started with my favorite Golden Vanilla Cake mix from King Arthur Flour.  This is the only vanilla cake I make, and for sure the best one I’ve tasted!

I divided the batter into 3 bowls, and tinted them light pink, purple, and teal.  This made 18 regular sized cupcakes.

Preheat oven to 325.  Move oven rack to upper third in the oven.

I placed a small ice cream scoop of each batter color, into paper liners in a cupcake pan.  Then I lightly swirled the colors together using a toothpick –  just once around.

Bake for 20 min – until toothpick inserted in center comes out clean.  Remove from oven, and cool completely.  So pretty!

Mix up a batch of my butter cream cheese frosting.  See prior post:  http://recipesinspiredbymom.com/frosting/.  Divide evenly into 3 bowls.  Tint with a TINY amt. of paste food coloring (pink, purple, and teal).  Stir to combine. Using a pastry bag, and your favorite tip (I used a Wilton 6B), pipe frosting onto cupcakes.  Garnish with your favorite sprinkles, and edible glitter for added sparkle!

Refrigerate covered, for up to 1 week.
